I hope everyone had a great weekend! Mine was very full, with a gig on Friday (I baked a flourless chocolate cake to bring—I’m refining the recipe a bit but will share when it’s ready), family visit and attending a beautiful violin concert on Saturday, and working on Sunday followed by volunteering at the Opera News Awards at the Plaza Hotel in the evening. We had the most delicious spring salad as our first course at the Plaza! It was burrata with pea shoots, favas, and some kind of crispy, thin breadstick thing. Yum.
I didn’t have a lot of spare time all weekend, so of course I procrastinated the things I really needed to do (homework for my interior design class) and instead did lots of meal prep for the week. One thing that makes me feel calm even when everything is hectic is having healthy food prepared so I can pack lunches for the week, so at least the procrastinating wasn’t time totally wasted. The list below is meant not as a recipe, but as one example of how to throw together different elements for a colorful, vegetable-centric meal. You can create your own version using any grains, cooked or raw vegetables, nuts, sauce, etc. that you want. This was vegan (and gluten free) by accident, but I often add chicken, fish, or dairy to a bowl or salad, depending on what I’ve craving and what ingredients we have on hand.
All of the activities and excitement of the weekend were great, but I’m looking forward to a relatively calmer week ahead and a weekend with nothing on the agenda other than smoking beef ribs in our stovetop smoker. (Definitely not vegan.) I also expect to be slightly less dazed, and so more coherent, for next week’s post, so I know we’re all looking forward to that!
